Start with the Dairy Matrix, Then Choose the Carrier

For a spoonable dairy spread, compare the unflavoured base, oil-packed mince and brine-packed mince from the same base-material lots. Write the formula basis before production and score top, middle and bottom separately after filling and at serving condition. For butter, add a spread test; for semi-hard cheese, assess mapped cut faces at the maturation stage used for release. These are different trials, not one dairy approval.

Keep Product Identity and Dairy Performance Separate

Those are verified ingredient facts. Whether the oil product produces oiling in a particular cheese, whether the brine product changes a spread’s moisture balance, or whether either product remains evenly distributed is a working hypothesis until tested in that dairy system. Match the Trial to the Structure of the Dairy Product

Choose addition points from the existing process map with the process owner. Do not bypass a safety control to preserve particle appearance; exclude a candidate stage if its incorporation or sampling cannot be performed within that process.

Choose Addition Timing from Distribution and Exposure

For a spread whose final blending step might damage pieces, compare addition before that step with addition during a later incorporation step already available on the line. Keep SKU, ingredient basis and base formula fixed. Retain samples on both sides of the changed step; compare particle edges and clusters before interpreting the finished tubs.

Inspect the ingredient before and after the relevant mechanical step. If the nominal 1–3 mm pieces become indistinct, identify where the change occurs rather than assuming the product itself is unsuitable. Run the Control, Oil and Brine Pilots on a Written Basis

  1. Retain an unflavoured control made from the same dairy-base lots. Record its formula, equipment route, filling and cooling sequence.
  2. Make separate oil-packed and brine-packed candidates. Record supplied ingredient mass, complete or drained use, draining method if used, and every adjustment to base fat, water and salt. Equal gross ingredient mass is not a neutral comparison.
  3. Keep batch scale, addition point, equipment and sampling sequence matched where possible. Log unavoidable differences so they are not attributed to the carrier.
  4. Take containers from the beginning, middle and end of filling. Inspect the top, middle and bottom of each sampled tub without blending those positions back together.
  5. Compare coded samples at the same recorded serving condition. For cheese, use mapped cut faces; for butter and spreads, repeat the same spreading action. Follow the product's existing safety programme for tasting and storage work.

If oil appears only in the oil-packed spread, inspect its complete fat contribution and incorporation method before rejecting minced format.
