Choose the Format from the Desired Finished Result
Start with what the diner or customer should see and experience. Use minced truffle when many small distribution points matter; carpaccio when slices should remain visible; 5 mm or 8 mm cubes when a manufactured product needs calibrated inclusions; .and whole preserved truffles when the kitchen needs to slice, dice, shave or otherwise portion the ingredient to order. The carrier is a second decision: olive oil contributes to the fat phase, while brine introduces a water-and-salt question. Neither is automatically preferable.
Route the Requirement to the Right First Candidate

For a sliced terrine, compare cubes before carpaccio if the requirement is discrete inclusions throughout the cut face. For a plated terrine garnish, compare carpaccio with slices cut from whole preserved truffles. The same dish name leads to different candidates because the ingredient has a different job.
A preserved format does not replace the fresh ingredient in a concept built around fresh-truffle texture or tableside shaving. Check that broader choice before spending time comparing preserved cuts.
Understand What Changes When the Cut Changes
The minced product in olive oil and minced product in brine provide approximately 1–3 mm pieces. Their advantage is distribution potential: a developer can place truffle pieces through a sauce, filling, cheese or spread instead of relying on a few large inclusions. Their limitation is equally practical—small pieces can settle, cluster, lose visual definition or follow a carrier phase through the process.
The carpaccio in olive oil and carpaccio in brine begin as approximately 1 mm slices. Choose them when the slice itself is part of the visual or eating brief. Sticking, folding, breakage and carrier accumulation are more relevant than fine-particle dispersion. If the finished product does not need an identifiable slice, minced or whole material may offer a more logical starting point.
The 5 mm cubes and 8 mm cubes are defined by nominal geometry, not quality grade. They are useful when a meat processor wants the inclusion pattern to be designed around product diameter, matrix coarseness and slice thickness. Equipment clearance, retention and piece damage must be observed on the intended line.
The whole preserved format transfers cutting control to the user. It is the flexible option when one approved ingredient needs to supply several cuts, but it also introduces labour, natural-size variation and trial-specific yield. It is less attractive when repeatable calibrated geometry is more important than cutting flexibility.
Make the Carrier Decision Explicit
When the complete product enters a recipe, olive oil contributes oil and brine contributes an aqueous, salted medium. When the pieces are drained, the method and formula basis still matter. “Drain as needed” is not reproducible; specify the tool, handling time and weighing point used in the trial.
Equal gross masses of oil-packed and brine-packed products are not a neutral comparison. The current product labels and approved specifications define each composition. Compare Two Formats against One Finished Brief
For a restaurant testing a visible terrine garnish, prepare carpaccio portions and slices cut from whole preserved truffles on the same terrine and crockery. Record each exact SKU, starting material mass, carrier treatment and portion basis. Do not call this a pure cut comparison: the complete products and preparation work differ.
- Write the slice role and acceptance reference before opening: visible coverage, intact edges and whether a slice travels with the intended bite.
- Prepare representative pieces, not only the largest slices. Keep the terrine lot, plate layout, operator and pass-to-table route unchanged during the first comparison.
- Compare portions from the beginning and end of each working quantity, both immediately and after the service delay recorded for that dish.
- Record intact presentation pieces, partial pieces, carrier pooling, slice movement, preparation effort and complete-bite texture separately. Note the condition in which each defect appears.
For manufacturing, replace that plate test with the actual equipment path. A garnish test cannot approve line performance.

Record actual observations or “not assessed” with a reason; a single overall preference score hides why a candidate failed.
